  • 3 medium-sized zucchini (sliced)
  • 4 slices turkey bacon (or chicken bacon)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1/2 cup crispy fried onions
  • 1/2 cup freshly shaved parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat a large sauté pan over medium-high heat. Add turkey bacon pieces and cook until crispy, about 6-8 minutes. Remove bacon but keep the rendered fat in the pan.
  2. Lower heat to medium and add sliced zucchini to the pan. Sauté for 5-8 minutes until tender but slightly firm.
  3. Stir in chopped sun-dried tomatoes and continue cooking for another 5 minutes.
  4. Add cooked bacon and half of the parmesan cheese to the pan, stirring until well combined. Season with salt and pepper as needed.
  5. Top with remaining parmesan cheese and crispy fried onions before serving warm.
