  • 1/4 cup + 1 tbsp dill pickles (finely chopped)
  • 1/4 cup purple onion (finely chopped)
  • 2 tbsp Just Mayo or Vegenaise
  • 2 1/2 tsp stone ground mustard
  • 1 1/2 tsp apple cider vinegar
  • Salt and black pepper to taste
  • Fresh dill (for garnish)
  • Multigrain or gluten-free bread

Instructions

  1. Drain and rinse the chickpeas under cold water. Using a potato masher, roughly mash them in a mixing bowl until creamy yet chunky.
