  • 1 (15-ounce) can of chickpeas, rinsed and drained
  • 1 ½ cups cooked rice, chilled
  • 1/2 cup Panko breadcrumbs (plus more for coating)
  • 1/4 cup fresh parsley, finely chopped
  • 2 tablespoons fresh chives, finely chopped
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, mash the rinsed chickpeas until mostly smooth but still chunky.
  3. Add the chilled rice, Panko breadcrumbs, parsley, chives, garlic, onion powder, smoked paprika, salt, and pepper. Mix well.
  4. Incorporate the egg into the mixture using clean hands until everything is combined without overworking it.
  5. Chill the mixture in the refrigerator for at least 30 minutes.
  6. Form the mixture into balls about 1.5 inches in diameter and roll them in Panko breadcrumbs for coating.
  7. Arrange them on the prepared baking sheet with space between each ball and brush lightly with olive oil.
  8. Bake for 20-25 minutes or until golden brown and crispy.
