  • 1/2 cup Dutch process cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 3 large ripe bananas (about 1 1/2 cups mashed)
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup canola oil (or melted coconut oil)
  • 3/4 cup packed light brown sugar
  • 1 large egg (room temperature)
  • 1 teaspoon pure vanilla extract
  • 1 cup semisweet chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-by-5-inch loaf pan by greasing it with nonstick spray or butter.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and sea salt until well combined.
  3. In another large bowl, mash the ripe bananas until smooth. Mix in melted butter, oil, brown sugar, egg, and vanilla extract until smooth.
  4. Gradually combine the dry ingredients with the wet mixture until just blended. Fold in 3/4 cup of chocolate chips.
  5. Pour the batter into the prepared loaf pan and sprinkle remaining chocolate chips on top.
  6. Bake for 50-65 minutes or until a toothpick inserted comes out clean with a few crumbs attached.
  7. Allow to cool in the pan for about 15 minutes before transferring to a wire rack to cool completely.
