  • 3 garlic cloves, peeled
  • ½ cup fresh parsley
  • 1 tablespoon ground turmeric
  • 1 tablespoon apple cider vinegar
  • ½ cup olive oil
  • Salt and freshly ground pepper (to taste)
  • 1 ½ pounds skinless, boneless chicken thighs, cut into 1-inch pieces
  • 2 kielbasa sausages, sliced
  • 1 large carrot, finely diced
  • ½ cup white grape juice
  • 2 ½ cups chicken broth
  • 1 cup white long-grain rice, rinsed
  • 2 bay leaves
  • 2 Roma tomatoes, chopped

Instructions

  1. Finely chop the onion and garlic. Heat olive oil in a large pot over medium heat. Sauté onion until translucent (about 5 minutes), then add garlic for another 30 seconds.
  2. Stir in diced carrot and sliced sausages; cook until softened (about 8 minutes).
  3. Add the chicken thighs to the pot, seasoning with salt and pepper. Cook until browned (about 10 minutes).
  4. Pour in white grape juice and chicken broth; stir in bay leaves and chopped tomatoes.
  5. Bring to a gentle boil, reduce heat to low, cover, and simmer for about 30 minutes.
  6. Fold in rinsed rice; cover and cook for an additional 20–25 minutes until liquid is absorbed.
  7. Remove bay leaves, garnish with parsley, let rest for five minutes before serving.
