  • 1/2 cup rice vinegar (or white grape juice vinegar)
  • 1/2 cup water
  • 1 cup white sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon light soy sauce (or coconut aminos)
  • 4 teaspoons red chili flakes
  • 3 teaspoons corn starch
  • 2 tablespoons water (for slurry)

Instructions

  1. In a small bowl, mix the cornstarch with 2 tablespoons of water until smooth.
  2. Toast red chili flakes in a medium saucepan over medium heat for about 3 minutes until fragrant.
  3. Add rice vinegar, water, sugar, minced garlic, and soy sauce to the saucepan. Stir gently.
  4. Bring the mixture to a boil while stirring occasionally for about 4 minutes.
  5. Reduce heat and slowly add the cornstarch slurry while whisking continuously until thickened.
  6. Remove from heat and let cool before transferring to an airtight container.
