  • 1 1/2 cups granulated sugar (for filling)
  • 1/3 cup corn starch (for filling)
  • 6 large eggs
  • 3/4 cup freshly squeezed lemon juice
  • 1/4 cup reduced raspberry puree

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine melted butter and ½ cup sugar. Add flour, corn starch, and salt; mix until a dough forms.
  2. Press the dough evenly into a greased 9×13-inch baking pan. Bake for 20 minutes until golden brown.
  3. For the filling, whisk together remaining sugar and corn starch in a bowl. Add eggs one at a time, whisking after each addition. Mix in lemon juice and raspberry puree until smooth.
  4. Pour the filling over the cooled crust and bake for an additional 25-30 minutes until set.
