  • 8 Granny Smith apples (about 9 cups sliced)
  • 2 tbsp unsalted butter
  • ½ cup granulated sugar
  • ¼ cup heavy cream
  • ½ cup brown sugar
  • 2 ½ cups all-purpose flour
  • 1 tsp ground cinnamon
  • Juice of ½ lemon
  • ¼ tsp nutmeg
  • ¼ tsp allspice
  • ¼ tsp salt
  • 1 tsp salt (for crust)
  • 1 cup cold butter (diced)
  • ½ cup ice water
  • 4 tbsp cornstarch
  • 1 tbsp butter (to finish)
  • 1 egg + 1 tbsp water (for egg wash)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and slice the Granny Smith apples into thin wedges, tossing them with lemon juice.
  3. In a skillet over medium heat, melt butter and add sugar; sauté apple slices until slightly softened. Add cinnamon and stir well.
  4. For the crust, combine flour and salt in a bowl; cut in cold diced butter until crumbly. Gradually add ice water until dough forms; chill.
  5. Roll out the dough and fit it into a pie dish, then fill it with the sautéed apple mixture.
  6. Prepare the caramel by melting butter with brown sugar; whisk in heavy cream until smooth.
  7. Drizzle half of the caramel over the apple filling.
  8. Roll out another dough layer for the top crust, seal edges, and create slits for steam.
  9. Brush with egg wash and bake for about 25-30 minutes or until golden brown.
