In a large pot, heat the olive oil over medium heat. Add minced onion and sauté until translucent, about 3-4 minutes.
Add ButcherBox Ground Beef to the pot and cook until browned, breaking it up as it cooks.
Stir in minced garlic, bay leaf, dried basil, parsley, oregano, black pepper, and red pepper flakes if using. Cook for an additional minute until fragrant.
Pour in crushed tomatoes along with beef broth and water. Stir well to combine all ingredients.
Bring the mixture to a boil, then reduce heat to simmer for about 10 minutes.
Add reginetti pasta (or broken lasagna noodles) directly into the pot. Cook according to package instructions until al dente.
Remove bay leaf before serving. Ladle into bowls and top with ricotta cheese or grated Parmesan if desired.
